Creamy Cucumber Salad
- 1 large English cucumber
- 1 large clove garlic, minced
- 2 generous Tbsp. sour cream
- 2 generous Tbsp. mayonnaise
- juice of half a lime or lemon
- one large sprig of basil, minced
- salt, pepper, paprika to taste
Peel the cucumber and slice into thin wheels. I like to peel mine decoratively with a zester. Place the cucumber slices in a colander in the sink, sprinkle generously with salt, and leave to sit while you make the dressing
Mince the garlic and basil. Combine the garlic and basil with the sour cream, mayonnaise, lime or lemon juice, basil, salt, pepper, and paprika to taste.
Rinse the cucumber slices well to eliminate the excess salt, and squeeze them hard to drain excess water. Place the squeezed slices in a bowl. Top with the dressing, stir to combine, and serve promptly.
